Bacon Harvest Salad

Total Time: 30 minutes I Servings: 4-8*

Instructions

  1. Combine all ingredients for the Classic Vinnaigrette in a 16 ounce lidded jar, shake vigorously to combine. Place in the fridge while you prep the salad.

  2. Cook bacon to desired crispness. Chop bacon and set aside.

  3. Place the spring mix lettuce in a large bowl and toss with ½ to ¾ cup of Classic Vinaigrette, or enough to coat the greens to your desired level.

  4. Top the lettuce with the bacon, feta cheese, honey roasted peanuts, craisins, and apple cubes. Serve Immediately.

Notes

*This salad pairs nicely with grilled chicken and can easily be served as an entree or a side salad.

*I recommend using a Cosmic Crisp apple for this recipe, but your favorite red apple will work just the same.


This Bacon Harvest Salad is inspired by the first restaurant I ever worked at. They served a similar salad that I loved, and when the restaurant closed, it was one of those dishes I unexpectedly found myself missing. So, I recreated my own version. The salad is loaded with crisp bacon, fresh produce, and plenty of texture, but the real star is the classic vinaigrette. I’ve been making this dressing for years, and it has become a staple in my kitchen—one of those recipes I come back to again and again.

Ingredients

For the Classic Vinnaigrette

1 cup extra virgin olive oil

½ cup balsamic vinaigrette

1 ½ tablespoons dijon mustard

2 cloves garlic, minced

1 ½ tablespoons honey

1 tablespoon lemon juice

1 teaspoon pepper

1 teaspoon salt

For the Salad

¾ chopped bacon (about 6 strips)

10 ounces spring mix (2 bags)

¾ cup crumbled feta cheese

⅓ cup honey roasted peanuts, lightly crushed

⅓ cup craisins

1 apple, cut into ½ inch cubes*
