
Stump Grinder Sandwich

Instructions
Start by prepping the salad. In a small bowl, mix the red onion, banana peppers, mayonnaise, red wine vinegar, Italian seasoning, and salt and pepper to taste. Once the flavor is where you want it, mix everything in a larger bowl with the shredded lettuce.
Assemble your sandwiches by layering the turkey, salami, provolone, bacon, and tomato slices. Top each sandwich with the grinder salad mixture. Serve immediately.*
Notes
*Depending on how much tomato you like, I recommend buying extra (3) tomatoes.
*If I know I am taking these on the road, I like to prepare the sandwiches in advance and prepare the salad right before serving to prevent the sandwiches from going soggy.
I was assembling grinder sandwiches for a day on the lake, and the only prep space I had was an old tree stump. The name practically wrote itself, and as someone who spends a lot of time writing recipes, it felt like I knew right then that this sandwich had officially earned its name. There's something about a cold, loaded grinder sandwich after a morning on the water that I can't quite explain, it just tastes better. Ingredients
For the salad
⅓ cup red onion, minced
⅓ cup banana peppers, minced
⅓ cup mayonnaise
¼ cup red wine vinegar
1 teaspoon italian seasoning
6 ounces shredded lettuce
Salt and pepper to taste
For the sandwich
4 ciabatta buns
8 ounces deli turkey
8 ounces deli salami
4 slices Provolone cheese
8 slices cooked bacon
2-3 medium-large vine tomatoes, sliced*
