Whipped Feta & Hot Honey Crostini
This Whipped feta and hot honey crostini quickly became a go-to after I brought a double batch to a Christmas party- only to realize how rich and satisfying it is. A little truly goes a long way. The jammy onion and garlic olive oil drizzled over the creamy feta, balanced perfectly with the sweet heat of the honey. Its bold, indulgent, and always one of the first things to disappear.

Ingredients
Topping
2 tablespoons olive oil
4 scallion greens, cut into rounds
3 cloves garlic, minced
½ cup crushed pistachios
¼ cup hot honey
Crostini
1 French Baguette, cut into ½ inch rounds
3 tablespoons melted butter
3 tablespoons olive oil
1 ½ teaspoons garlic powder
Whipped Feta
8 ounces feta cheese
½ cup plain greek yogurt, 5% milkfat
3 tablespoons olive oil
1 ½ tablespoons lemon juice
salt and pepper to taste
Preheat oven to 400°F
Prepare topping. In a sauce pan, heat olive oil over medium heat. Add scallions and garlic. Saute for 5-7 minutes. Set aside to cool.
Place baguette rounds on a parchment lined baking sheet.
Prepare crostini. Combine melted butter, olive oil, and garlic powder in a small bowl. Lightly brush mixture onto each side of the bread rounds. Toast for 7-9 minutes or until golden.
While the crostini is in the oven, combine all ingredients for the whipped feta in a food processor. Blend until smooth.
When the crostini has cooled completely, top each round with about 1 tablespoon of whipped feta. Lightly drizzle scallion olive oil over each piece followed by a light dusting of crushed pistachios and drizzled hot honey. Serve immediately.
